Tastebud Travel
I may be stuck in Italy for the time being, but that doesn't mean that my tastebuds have to be.
BBQs are a good, healthy way to enjoy food in the summer (all seasons actually, don't let a little rain put you off), and I like to marinate my chicken before it sizzles away on the grill. Today I am going to try out 4 different flavours but with the added bonus that they are also cheats - in other words little preparation due to using pre-mixed spices. Occasionally, this is allowed!
Later, we'll be trying out:
A hint of Thailand
1 chicken breast
1 juicy lime - quartered and squeezed
1 smashed garlic clove
1 spring onion chopped into chunks
a sprinkling of ground lemon grass (the cheat part)
Chuck everything into a bowl, including the squished lime quarters. Make sure the chicken is covered in lime juice and lemon grass. Refrigerate.
Bombay taste bomb
1 chicken breast
1 tsp of oil
1 small onion cut into slices
liberal sprinkling of bombay curry powder
As above - chuck everything into a bowl and make sure the chicken is covered in the flavours. Chill.
Choke Juice Chicken
you guessed it - 1 chicken breast
1 smashed garlic clove
1 tbsp of the herby oil that my artichoke hearts had lived in. (The jar says Carciofini alla paesana and the ingredients are roughly: sunflower oil, parsley, garlic, wine vinegar and salt. There will also be a leftover hint of artichoke, naturally).
What do you think? Bowl, cover, chill.
Hurrah for Harissa!
There's no marinated chicken without a chicken breast
1 tsp of olive oil
Liberal grinding of harissa spice mix
Combine. Chill.
Now to the beach while the flavours do their thing.
