Cool and fresh...Gazpacho

Gazpacho - a godsend on a hot day. Cool, refreshing, and with the added bonus of being healthy, even non-tomato lovers (and that includes me) can enjoy this cold soup in sultry heat.

I have recently moved to Rovigo, Italy and I am embracing not only basic Italian cooking, but house restoration and self-sufficiency. I have a long way to go on the latter two but the former I am quite comfortable with.

Technically it is still winter, but the warm days of southern Spain make me think if spring; hence my meals are a combination of the two.
